The inventive chef experiments with molecular gastronomy, creating intricate dishes such as prawn ceviche with avocado, Peruvian potato, smoked chili, jicama, puffed corn noodles and corn nuts; and coffee- and cumin-rubbed rock hen breast with confit wings and creamed curry corn.
