The menu takes Canada's best ingredients and produces such dishes as roasted young partridge with truffles, pecan crusted caribou, and cedar-roasted Alaskan sable fish. Appetizers are just as tempting: terrine of Quebec foie gras, pheasant consomme, and roasted loin of rabbit with pancetta. The prix fixe menu changes seasonally, and a tasting menu with five courses is revised weekly. A terrific wine list and a selection of single malt scotches complement the cuisine beautifully. |
