Aubergine's elegantly rustic stone and wood décor is brightened with splashes of cobalt, and the views from its floor-to-ceiling windows showcase both Rainbow and Sproat Mountains – during the warmer months, the views from the patio are even more impressive. The emphasis here is on local produce, so every dish is wonderfully fresh and flavorful. Try a grilled steak, pork osso bucco, planked BC salmon or pot roast, each with accompaniments such as garlic mashed potatoes and fresh steamed vegetables. The "Experience" menu is more upscale: start with a terrine of foie gras or grilled squab breast with celeriac purée and huckleberry sauce, then move on to a magnificent main course of sautéed duck breast, caribou tenderloin, grilled venison, or butter poached lobster.
