The eminently creative menu reinterprets Polynesian traditions, and customary ingredients find new expression. Fresh fish comes crusted with sesame paste or foie gras, lobster is sauteed with rum and pineapple, and roasted prawns tumble alongside mushrooms and asparagus. Steak, lamb, and chicken receive similar treatment. Appetizers, favored over entrees by some, are also sublime. Barbecue-glazed ribs and coconut cream-topped oysters are incredible, and the Silken Purse takes wontons to new heights. Take time to enjoy the bar's extensive menu of martinis, cognacs, and ports.
