        Description: SAINT-JEAN BAPTISTE. Chef-owner Shigeo Kimura opened his Toronto restaurant more than 20 years ago, and to the delight of local sushi fanciers he expanded to Québec in 2005. The two-level restaurant has several distinct dining spaces. At the sushi bar, order the omakase – the chef prepares a variety of incredible sushi and sashimi for you, some of which is not on the regular menu. At the sake bar it's customary to order izakaya, small portions of tasty tapas-like tidbits designed to complement beer and sake. If you have children dining with you, opt for the teppan yaki room upstairs, where a chef skillfully and acrobatically prepares a multi-course meal right at the grill table in front of you. Most of the menu is served throughout the restaurant which is great when you want sushi but your companions want donburi or another cooked dish. One thing's for sure – no one should leave Ginko hungry!

        Description: SAINT-ROCH. Yuzu's décor is very linear, with lots of squares and straight lines, highlighted by some cool cubby holes along one wall, each with its own recessed light source. The food, on the other hand, is about as curvy and innovative as it can be and still remain edible. Many dishes are Japanese-inspired, and sushi and sashimi hold a proud place on the menu, but beyond that the cuisine defies categorization. Quail on bacon and parmesan polenta, Spanish mackerel with pink grapefruit caramel and cabernet vinegar, and Tasmanian trout sashimi prepared eight ways all make appearances on the same menu. As do a trio of unlikely-sounding oyster shooters. Not to be overshadowed, desserts continue the theme – try apple sage cake or an intriguing fig milkshake. Everything sounds just a tad over-conceived, but the end results are stunningly successful.

The room itself is incredible, and incredibly chic: architectural metal and glass are softened and warmed by sentinels of birch trunks and accents of bright color, for an ultra modern effect. The avant-garde menu changes frequently, and is often developed to accompany certain wines. The melding of flavors and textures is paramount here, and while some dishes may sound odd on paper they translate to the plate perfectly. If you go to just one or two restaurants in Québec, this should be one of them!
