PEMBROKE PARISH. This rustic restaurant has the ambiance of a Mediterranean grotto. Sit on the brick patio by the fountain if exposed stone walls seem too overpowering. The Italian cuisine is served up with a healthy dose of fresh island ingredients. The signature dish is pork filet mignon, rolled in ginger and served with eggplant and star fruit julienne. Raisin and pineapple polenta and Caribbean salsa are served on the side. Scallops are also excellent and come with potato-basil dumplings. Of course your meal won't be complete without a bottle from Hamilton's largest cellar. |
