Attractive, contemporary-rustic décor is the ideal counterpart to Bison Mountain Bistro's fabulous Canadian cuisine. The bison burger, topped with Saskatoon berry chutney, comté and house-made smoked tomato ketchup, is scrumptious. Interesting wood-fired pizzas are a worthy choice – try one with local Valbella bacon, tomatoes, arugula and gouda. Raclette, a mountain staple, is made here with three cheeses and accompanied by smoked bison, bündnerfleisch, cornichons, baby potatoes and steamed veggies. At brunch, the Benedicts (all served on a cheese-herb biscuit) are awesome – for something more unusual, opt for the duck confit and chèvre version. The lounge is popular for pre- and post-dinner drinks, and don't miss the General Store, stocked with fine cheeses, house-made condiments and great prepared meals. |

This expansive dining room is one of the hotel's largest, most popular venues. It's usually busy throughout the day, but it makes the most of its space by offering both a la carte and buffet dining. In the evenings, the menu focuses on Canadian fare, especially steaks and seafood. Appetizers include oyster mushroom chowder and Dungeness crab cakes; rotisserie options feature duck and chicken, succulent when roasted on a spit. Alberta beef is offered in several different cuts and comes with rich, accompanying sauces, and you'll also find pork chops and local trout on the menu. Reservations are a smart idea, especially if your time in Banff is limited. |

Lauded for its spectacular cuisine and carefully-chosen wine list, the BML makes terrific food and great service look easy. It's no mean task, however, to remain at the top, and the restaurant works feverishly to surmount expectations. The interior mixes rustic architecture with refined details; the cuisine adds to the excellence. Main courses, which feature Rocky Mountain fish and game, include medallions of ranch elk with sour cherry compote, seared halibut on black rice, and roasted pork tenderloin with morel mushroom cream sauce. Chicken, duck, caribou, lamb and salmon also join the list of options. An ideal choice for an evening out. |

The restaurant is open throughout the day but is especially nice for a relaxing dinner removed from the main hotel. Plus, the sunsets are astounding. Entrees feature several different cuts of Alberta beef, including tenderloin and prime rib. Pork and lamb are also available, and fish caught in local waters are fresh and delicate in flavor. Transportation between the hotel and clubhouse runs every half-hour. |
