Topped with caramelized onions, Szechuan barbecued salmon gains flavor from garlic, orange peel, and fresh herbs. The Hunan rack of lamb, tinged with sesame oil and hoisin sauce, is grilled medium-rare for tenderness. Steaks, poultry, and pastas also find room on the menu, as do the fabulous desserts, such as Kona coffee creme brulee. An upcountry Maui favorite.

The eminently creative menu reinterprets Polynesian traditions, and customary ingredients find new expression. Fresh fish comes crusted with sesame paste or foie gras, lobster is sauteed with rum and pineapple, and roasted prawns tumble alongside mushrooms and asparagus. Steak, lamb, and chicken receive similar treatment. Appetizers, favored over entrees by some, are also sublime. Barbecue-glazed ribs and coconut cream-topped oysters are incredible, and the Silken Purse takes wontons to new heights. Take time to enjoy the bar's extensive menu of martinis, cognacs, and ports.

For a refreshing change of pace, sashimi salad with pohole ferns is a terrific first course. Just-caught fish, enlivened by the kitchen's culinary skills, makes for a nice meal too. On Friday evenings, hula performances are given by area families.

Then try lobster in saffron sauce, sesame-crusted lamb, or the famous ahi and ono tempura (two types of local fish cooked medium-rare and served with white miso dressing and lime-basil sauce). A vegetarian special of tofu, lentils, and vegetables is also popular. For a terrific ending, sample mango cheesecake or a fruit sorbet while you listen to live jazz, played Fridays and Saturdays beginning at 9pm.

The "mixed plate," as it was called, featured two or three entrees, a scoop of macaroni salad, and "two scoops rice." It was also nutritionally sound. Nowadays, at this colorful, ocean-front eatery, diners may choose from a number of dishes, including coconut prawns, shoyu chicken, kalua pork, and teriyaki beef. Outdoor tables accommodate the crowds, and a full bar serves up cooling beverages. For a taste of local flavor, the Mixed Plate can't be beat. Ask around if you have any doubt.
