Refined and elegant, this distinguished restaurant pampers diners with fantastic regional cuisine and the soothing strains of a harp. The menu takes Canada's best ingredients and produces such dishes as roasted young partridge with truffles, pecan crusted caribou, and cedar-roasted Alaskan sable fish. This expansive dining room is one of the hotel's largest, most popular venues. It's usually busy throughout the day, but it makes the most of its space by offering both a la carte and buffet dining. In the evenings, the menu focuses on Canadian fare, especially steaks and seafood. Appetizers include oyster mushroom chowder and Dungeness crab cakes; rotisserie options feature duck and chicken, succulent when roasted on a spit. Alberta beef is offered in several different cuts and comes with rich, accompanying sauces, and you'll also find pork chops and local trout on the menu. Its golf course location affords terrific views of the surrounding mountains and valleys, perfectly complementing a menu of local meats and fish. The restaurant is open throughout the day but is especially nice for a relaxing dinner removed from the main hotel. Plus, the sunsets are astounding. Entrees feature several different cuts of Alberta beef, including tenderloin and prime rib. Pork and lamb are also available, and fish caught in local waters are fresh and delicate in flavor. Transportation between the hotel and clubhouse runs every half-hour. |

Description:
Built in 1888 to accommodate Victorian tourists who came to visit the area's hot springs, this spectacular hotel was the world's largest when it opened. Built and furnished to resemble a Scottish castle, it was designed by Bruce Price, a New York architect, at the urging of William Van Horne, General Manager of Canadian Pacific Railways. The hotel, which is known as "Canada's Castle in the Rockies," remains as Banff's signature property and, following renovations begun in 1999, is still one of the most beautiful hotels in Canada. Day visitors are permitted to enjoy its restaurants, shops, and spa. |

Just a brief drive south of town, these thermal springs draw bathers year-round to their warm, soothing waters. The complex, which was renovated in 1996, has attracted visitors since the 1880s and now boasts modern facilities, including a large outdoor pool, a wading pool, and an indoor spa.
