Alberta game and fish are transformed into Dijon-rubbed rack of lamb, butterflied pork stuffed with dates and figs, maple syrup-basted pheasant breast, and pan-seared Atlantic salmon. You'll also find local beef, tender chicken and the delicious Captain's Table, which takes fresh shellfish, tosses it in marinara sauce and serves it over black pepper fettuccine. Breakfast and lunch are also served daily, either in view of the enormous stone fireplace inside or the towering peaks outside. A five-minute drive from town.

The ever-changing menu takes advantage of local ingredients, tempting diners with entrees like steak Madagascar (served in a sauce of red wine, brandy, and green peppercorns), veal scaloppine, rack of lamb, and salmon veronique. Main courses come with soup, salad, vegetables, and starch, ensuring that no one leaves hungry. Eat well, but make sure to save room for the homemade pastries. You'll be glad you did.
