WAILEA. Referring to Hawaii's state fish, the unwieldy moniker attached to this restaurant is generally shortened to "Humu." The name, however, isn't the only thing exotic about this restaurant, which is composed of multiple, thatched pavilions drifting in a saltwater lagoon. The atmosphere is unique, and the idea that you can capture your own dinner from the waters beneath is quite remarkable.
