Fairmont Hotels Description: Towering mountains, glistening lake, sparkling skies. The only views that could outshine the breathtaking vistas from the Fairview Dining Room are its refined china, silver, crystal and tapestry setting, or the simply elegant menu. Each dish stands out from the page, celebrating the freshest treasures of North America's fields, seas and rivers.

Select from unique and contemporary dishes, like Tataki of Bison with a beet and daikon radish salad, Lobster Bisque with leek and herb creme fraiche, Grilled Tofu, Quinoa and Napa Cabbage Rolls, and a Carmelized Banana Napoleon with Panetone ice cream.

Savor these lovely choices in the company of any one of the 400 labels which make up the Fairview Dining Room's extensive wine list. For those who enjoy a taste of culinary adventure, the Euro-styled ''tasting menu'' with its sampling of the finest creations of the day paired with unique wines of the world is a natural choice.
Description: A multi-tiered dining room looking out over the turquoise waters of Lake Louise greets guests at this gracious venue. Romantic and elegant, it is widely considered to deliver the Château's premiere culinary experience. The menu has a decidedly Canadian flair, offering such dishes as beef tenderloin, Alberta rack of lamb, venison, and Rocky Mountain pot au feu. Sea bass, Arctic char, chicken breast, and a vegetarian entree increase the selections. Jackets are required during the Summer months, adding to the restaurant's genteel ambience.
