Refined and elegant, this distinguished restaurant pampers diners with fantastic regional cuisine and the soothing strains of a harp. The menu takes Canada's best ingredients and produces such dishes as roasted young partridge with truffles, pecan crusted caribou, and cedar-roasted Alaskan sable fish. Appetizers are just as tempting: terrine of Quebec foie gras, pheasant consomme, and roasted loin of rabbit with pancetta. The prix fixe menu changes seasonally, and a tasting menu with five courses is revised weekly. A terrific wine list and a selection of single malt scotches complement the cuisine beautifully. |
