The dining room is beautifully elegant, pale salmon-colored walls set against architectural details of polished oak. The menu's European sensibility works well with Canadian game, resulting in succulent entrees of Alberta lamb, Atlantic salmon, Canadian buffalo steak and duck breast. Appetizers repeat the theme: salmon tartare, sage-roasted rabbit loin and roasted oxtail consommé. Desserts also fall in, as evidenced by the maple sugar-crusted crême brulée.
