Soaring ceilings, lit by brass chandeliers, echo the scale and volume of the landscape outside the restaurant's large windows. The restaurant, simultaneously elegant and rustic, is much like the cuisine: native ingredients refined through careful technique. Alberta game and fish are transformed into Dijon-rubbed rack of lamb, butterflied pork stuffed with dates and figs, maple syrup-basted pheasant breast, and pan-seared Atlantic salmon. You'll also find local beef, tender chicken and the delicious Captain's Table, which takes fresh shellfish, tosses it in marinara sauce and serves it over black pepper fettuccine. Breakfast and lunch are also served daily, either in view of the enormous stone fireplace inside or the towering peaks outside. A five-minute drive from town.
